Small onion, finely chopped

3 white boiled potatoes

2 tbsp extra-virgin olive oil

1choped tomato

1 tbsp white vinegar

1 tbsp parsley

3 tbsp  corn

3 tbsp  corn


1 -Boil the potatoes in salted water for 25  minutes or more  depending on the size until cooked(Dicing the potatoes up will make things go faster but I prefer cooking them whole because they maintain more of their flavor and natural sweetness)

2 – Drain let it cool and  peel

3 -Cut the potatoes into cubes, the same goes for tomato then put into a bowl with the onion, parsley,  then mix together the olive oil and vinegar Stir in the finely the corn

4 -Serve
